The Cox's apple, sage & cream sauce would be great with the chicken breast on page 41. Season the chicken with black pepper and bake it according to the hero recipe.

For the sauce, you just leave out the part with the pork. Do step 2 and leave out step 3. Start step 4 by melting the butter in the frying pan and then continue as per the recipe.  


Practical Playtime / Jobs For The Kids

  • Measure the apple juice.
  • Cut the butter with a butter knife.
  • Peel the apple with as much supervision as they need. 
  • Measure the creme fraiche
  • Pick the sage leaves of the stalk.

Both boys have already eaten the sauce when I did it with pheasant for one of my workshops in Norwich and the gently sweet and creamy nature make it a hit. I slice the pork very thinly for James, but he seems to suffer meat rather than really want to eat it. Maybe he'd rather be a vegetarian. There are all these things he might be, sometimes they keep me up at night. I try not to watch him too closely at the table, but I want to watch him closely all the time. Nearly 3. How did that happen?
