All the rules for this duck and gravy go for all the derivative recipes too. Give younger kids the breast meat, which is softer than the leg. The texture may put them off so make sure that the ginger is very finely grated, or scrape off the glaze. For kids who are not used to eating spices, halve the quantities and have some plain rice on hand to soften the flavours a little. That apart, the fruity and savoury sweet nature of this dish makes it an excellent way to introduce kids to duck.
