I love all good food and I’m lucky enough to be able to eat any and all ingredients, but I appreciate that everyone is not as fortunate as me. At my old cookery school in Provence there was such a celebration of vegetables available to me that we'd often end up eating vegetarian dishes four or five times a week. Not through a conscious decision, but simply because the ingredients were lovely and those ingredients were vegetables.
From those early Provencal days I began to look at all ingredients as potential stars of a recipe or meal. I learnt to embrace the chance to cook and write recipes for people who have special diets. My Cookbook for Everybody Everyday includes delicious dishes (sometimes with slight adjustment) for vegetarian, vegan, wheat free and dairy free diets.
